If you didn’t watch Facebook Live yesterday, you should now. My sister and her amazing chef husband came by and taught me how to make his famous chocolate sushi. This dessert take a little time, but is simple to make and you will definitely wow your guests or loved one (seriously perfect for Valentine’s Day). The ingredients and lose recipe below. Ingredient/Shopping List:
- 2 14oz. bags of shredded coconut
- 1/2 cup corn syrup
- 2 12oz bags of semi-sweet chocolate chips
- 10 oz. heavy cream
- parchment paper
Instructions: (watch the video for a better understanding on how to make this)
In a 1/4 sheet baking pan, toast one bag of shredded coconut for about 10 min at 450 degrees. But keep checking on it. You want some pieces to be brown and toasty, but other’s to stay white.
While that’s in the oven, in a small pot, melt 1 bag of chocolate chips and heavy cream until all of the lumps are gone. Pour that mixture onto the baking sheet that’s covered with a piece of parchment paper and place in the freezer for about an hour. This makes the inside ganache/fudge.
Don’t forget to check on your toasted coconut. Remove if done.
Now, place the other bag of shredded coconut and corn syrup in another bowl and mix together to create the sticky rice. Don’t be afraid to use your hands. 🙂
Place some of that sticky rice on a piece of parchment paper and pat down until it’s about .25 inch thick. You’ll then remove the ganache from the freezer when it’s ready, and place a thin sliver of it on the “sticky rice”. Writing this is super confusing, so I promise… watch the video. It’s easier than I’m making it sound.
Wrap it like a sushi roll in the parchment paper (again, watch the video) and place in the freezer for about an hour.
Place the other bag of chocolate chips in the microwave until they melt (keep checking and stirring). When done, pour the melted chocolate in a baking sheet.
Quickly remove the “Roll” from the freezer, take off the parchment paper and cover the entire rill with the melted chocolate and then toasted chocolate. Freeze again for about 30 minutes.
Remove and cut into slices.
I’m telling you, this is SOOOOOOO delicious. I’m not sorry I just used so many O’s. This dessert deserves it.
