Ingredients
- 1 1/4 cups of flour
- 1 1/4 cups of soy milk (or almond milk)
- 2 tsp vanilla
- 3 tbsp sugar
- 1/4 tsp salt
- 2 tbsp coconut oil
- 1/2 cup of fresh blueberries
- 2 tsp baking soda
Directions
Preheat waffle iron.
Mix the flour, baking soda, salt, sugar and flour in a mixing bowl. Whisk in the coconut oil, soy milk and vanilla until there are no lumps. Gently fold in the blueberries, leaving some to top the waffles. Grease your waffle iron and pour out the batter, cook until golden brown (about 8 minutes). Enjoy!
